Based on our Hon Mirin called Enju, this is a superb product made with the garden Koji, which originated from Niwata Shrine in Shiso City, Hyogo Prefecture, and Yamada Nishiki, which is a rice suitable for sake brewing. The use of Yamada-Nishiki gives it a sake-like flavor. It is a 2020 Five-Star Hyogo selected product. We claim to be the first in Japan to use Yamada-Nishiki in Hon Mirin, since there are no hits as far as we can find.
The "Yamada-Nishiki" sake rice used in this product was born in Hyogo Prefecture, where our company is located, and is known as the "King of Sake Rice.
